The perfect basic enchilada sauce.
Ever wonder how to get that perfect enchilada sauce that you get from restaurants? Tired of the basic can of enchilada sauce? Well, look no further! This easy enchilada sauce comes together in as little as 30 minutes, tastes fresh, and only uses 3 ingredients!
Ingredients:
- 16 dried California chiles, destemmed, deseeded
- 2 medium-sized Roma tomatoes
- 2 teaspoons salt
- 6 cups of water
Directions:
1. Place everything in a medium-sized pot and cook for 20 minutes, or until chiles are soft and tomato skins look shriveled. Turn off heat and cover with a lid. Let sit for another 20 minutes to cool.

2. Put cooked chiles and tomatoes into a blender. Add ½ cup of chili water and blend until smooth.
3. Grab a 12-inch pan, put the mixture into a sieve, and push the sauce through with a spoon onto the pan.
4. Discard the pulp left in the sieve. You should end up with a silky, smooth vibrant red sauce.
You did it! Your homemade enchilada sauce is complete and ready to be used! Use to dip your tortillas in or just pour over your enchiladas!
