It’s a complete balance of flavors and you won’t even be able to tell that there is zucchini in here. We’re putting two powerhouses together into one super-packed sauce.

Apples, a household staple that lets everyone know fall is coming! They are a versatile fruit that can be enjoyed in many ways. They say an apple a day keeps the doctor away. That’s because of all the health benefits that apples provide. Apples are a rich source of micronutrients and polyphenols that can help mitigate micronutrient deficiencies and chronic diseases. They also have high levels of antioxidant activity which can inhibit cancer cell growth. What’s not to love about these nutritious and delicious foods!

Zucchinis are a garden staple and have such a subtle flavor that you can put them in any dish and not even know it’s there! Despite being subtle in favor, they are abundant in nutrition. Zucchinis have many biological properties such as antioxidants, antimicrobials, antidiabetic, anti-inflammatory, and anticancer activity. They have been used in traditional folk medicine to treat colds and alleviate aches.

By the end of the season, there are so many zucchini that I don’t know what to do with them! Many get shredded and placed in the freezer, Zucchini bread and muffins are a must, but what next? Well look no further, zucchini applesauce is here. Naturally sweetened with ripe, juicy apples, this delightful applesauce will have you coming back for more!

Cook time: 40 minutes
Total time: 1 hour 10 minutes
Serving size: 5 (1 cup) servings

Ingredients:
- 4 cups apples, peeled, cored and chopped
- 4 cups zucchini, peeled and chopped ( if larger seeds, remove)
- 1 tablespoon lemon juice
- 1 ½ teaspoons cinnamon powder
- 2 cups of water
Directions:
- Combine all ingredients in a dutch oven or a heavy duty 12-quart pot.

2. Turn heat on medium and cook until softened, about 40 minutes.

3. Turn off heat and let cool slightly. Blend with an immersion blender or mash with a potato masher until desired consistency.

4. Serve warm or cold, top with added cinnamon if preferred and enjoy!

Notes:
To store the applesauce, let the sauce cool completely before transferring it to jars or containers. Store in the fridge for up to a week. You can also place it in the freezer for up to one year.
Experiment with different apple varieties for unique flavors.
To make this sweeter, you can add ½ cup of organic granulated sugar. You can also add other spices like nutmeg or ginger for a twist.
