Fiber, protein and omega-3’s?! Who doesn’t love a nutrient dense version of a classic chocolate covered strawberry. This easy breakfast is easy to meal prep and will keep you full until your next meal, helping to fight off those cravings.

Ingredients:

  • 1 cup (240 mL) Almond milk (or milk of choice)
  • 1/4 cup (20 g) rolled oats
  • 1/3 cup (52 g) chopped strawberries (about 5 medium)
  • 2 tablespoons (20 g) chia seeds
  • 1 tablespoon (6 g) cacao (cocoa) powder
  • 1 teaspoon maple syrup or sweetener of choice, if desired.

Directions:

  • Gather ingredients and place all in a 16-ounce mason jar with lid. Shake/stir well (until all incorporated).
  • Wait 5-10 minutes, then shake/stir again to prevent chia seeds from clumping together too much.
  • Place mixture in the refrigerator for at least 4 hours, preferably overnight. The longer it rests, the thicker the mixture will be.
  • Once ready to eat, stir mixture again to maximize consistency, and enjoy!

Note:

This recipe is perfect for meal prepping and will last up to 5 days in the fridge. Easy for those mornings when all you have time to do is grab and go!

You can add any additional toppings your heart desires! Unsweetened coconut flakes, cacao nibs, berries, goji berries, etc.
